Fajitas with cilantro rice (no tortilla)

Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cookPeppers, sweet, red, raw, sliced, 1 cup Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) Jalapeno Peppers, 2 pepperGarlic, 2 cloves Salsa, 1 cupCheddar Cheese, 1 cup, shredded Cilantro, raw, 3 tbsp *White Rice, medium grain, 2 cup Butter, salted, 1.5 pat (1" sq, 1/3" high)
Sprinkle chicken with taco seasoning then salsa and bake. While baking cut bell peppers into strips, onions into strips. Dice jalapeno peppers and garlic. Add olive oilm onions and galic to frying pan and cook until onions are beginning to carmelize. Then add bell peppers and jalapeno peppers and cook until desired texture. Meanwhile cook rice, when done add butter and cilantro. Layer in a bowl rice then veggies then chicken, then cheese and salsa, and any other desired topping.
