Lentil Tostadas

Ingredients
lentils, water, tostada/taco shells, onion, assorted vegetables, cheese
Directions
Combine water, lentils, onion, garlic, salt, cumin (and cilantro if desired) in a pot and bring to a boil. Cook for 12-15 minutes. Lentils should be tender and water absorbed.
Mash lentils with a fork. Spread on tostada shells and top with diced vegetables and cheese. Broil for 2-3 minutes on a baking sheet, until cheese is melted.
Makes 4 servings.
