Mango-Pineapple Chutney

Ingredients
About 4 ripe mangos, cut into bite-sized pieces1 ripe pineapple, cut into bite-sized pieces1 cup light brown sugar1 cup cider vinegar2-3 cloves garlic, minced or gratedA 2 inch piece of fresh ginger, minced or gratedCayenne pepper, 1/2 TBSP or to tasteSalt and pepper, 1tsp each or to taste
Directions
Combine all ingredients in a large skillet or saucepan and bring to a boil over medium-high heat. Reduce heat to low and simmer for 25-30 minutes, stirring frequently to keep the mixture from sticking or scorching. Let chutney cool before serving and keep unused portions refrigerated.

Yields roughly 25 servings of 2 generous tablespoons.
