Ingredients

6C oatmeal1 1/2 c sugar2 tsp cinnamon2 tsp baking powder1/8 tsp salt4 eggs4 tsp vanilla4 tbsp melted butter
preheat oven to 375
mix dry ingredients together
lightly beat the 4 eggs with the vanilla and add to dry mixture, make sure melted butter has had time to cool off and pour in with dry as well.
Make sure all the dry ingredients are mixed together well (usually have to get my hands in there)
tighly pack about a 1/4 cup for each bar/cookie. (I usually use my hands for this too vs a measuring cup) Bake for about 19 or 20 minutes.

I'd like to try these too. I think I would try a 9"x13" pan as that would probably make 24 decent bars. Because we have to watch cholesterol,(& oatmeal is good) I would try switching the butter to a non hydroginated Margerine & maybe use an egg substitute or 1/2 egg whites instead of all the eggs - 3/4/09

What size pan do you use if you make bars? Do you make them into cookies and if you do, do you bake them in a cookie sheet or is this something you'd put into a muffin tin? I'd like to try them, they sound good. - 3/4/09

i usually just make them into cookies and use an ice cream scoop to get the amount out I want for each one. I've used a muffin tin but we like them better the other way.
