Easy Peasy Cinnamon Kugel

Ingredients
Directions
3 cups Cinnamon Toasters or Cinnamon Crunch Cereal2 T. unsalted butter8 oz. wide egg noodles1/2 cup tart dried cherries4 T. unsalted butter5 large eggs4 cups nonfat milk1/2 cup sugar1 tsp. ground cinnamon1 tsp. vanilla extract1/2 tsp. ground nutmeg1/2 tsp. salt
Preheat oven to 350 F. Spray 7.5" x 11" glass oven-safe dish with nonfat cooking spray.
Topping
Melt 2 T. butter and cool. In small bowl, crush cereal. Drizzle butter over cereal and mix with fork to combine. Set aside.
Pudding
Arrange noodles evenly in dish. Sprinkle cherries over noodles.
Melt remaining 4 T. of butter and cool. In medium bowl, combine butter with remaining ingredients. With whisk or hand mixer, mix well.
Pour custard over noodles and cherries. Sprinkle topping evenly over custard.
Bake until custard is set, about 60 minutes.
Makes 10 pieces, about 2 inch by 3.75 inches.
