Ingredients
2 Tbsp-Shredded Part-Skim Mozzarella Cheese3 Egg Whites 1 Whole EggWhatever tasty veggie you want to add...I decided to add: 1/4 C. Sliced Mushrooms2 tbsp. Chopped Onions
Directions
Makes 1 whole Pocket

Scramble Egg White and Whole Egg in bowl. Chop veggies, spray saute pan, and toss in veggies, saute on med-hi until slightly tenter. Set aside in seperate bowl.
Spray saute pan again, and pour in eggs, season with salt and pepper...let cook for 10min on medium head, until mostly cooked, add veggies and cheese on one side of the "omelete" carfully fold and flip. Carefully fold the half into another half, making a triangle. Pack into foil, for an on-the-go breakfast.
