Asian Veggie/Tofu Stir Fry

Ingredients
Ingredients: Trader Joe’s Extra Firm Tofu (1/5 block per serving), 5 serving Trader Joes Harvest Hodgepodge Vegetables, 3.75 cup Soy Sauce (Reduced Sodium Ginger) House of Tsang, 2 tbsp Soy/Sesame Marinade (China Blue), 1 tbsp Ginger Root, 1 tsp Green Onion, 0.3 tbsp Canola Oil (Crisco), 1 tbsp
Directions
Drain Tofu, cut into cubes.
Mix Soy sauce, sesame soy marinade (This is what I had in my cabinet... can substitute your own.) Grated fresh ginger root (Store this in your freezer it will be easier to grate and it keeps for months.) Finely chop green onion and whisk together. Place half the marinade and all of the cubed tofu in a bag to marinate for at least 30 minutes or overnight.)

To a hot wok or fry pan add canola oil and frozen veggies. when cooked through add tofu and cook for a minute. Add reserved marinade to heat through and serve. I serve this over brown rice and pair it with 2 Trader Joes vegetable Bird's Nests per person. Yummy!
