Chicken Picatta

Ingredients
Chicken Breasts, pounded flat or thin sliced2 T Olive Oil3 T Lemon Juice1 tsp Capers, minced2 T whole wheat flourPepper to taste
Directions
Heat skillet over medium high heat
Place oil in skillet and heat til sizzling
Dredge chicken in flour and place in skillet
Lightly brown of both sides (apprx. 2 mins each side)
Add lemon juice & capers to skillet
Simmer for 2 minutes
Serve

    This was super easy to make. The lemon flavor was a bit overwhelming, but I did not use fresh squeezed lemon juice. I will adjust the amount of lemon juice next time I make this. But a good recipe overall and I will definately make it again. - 2/8/11
