Egg white, 2 serving Mushrooms, canned, 0.5 cupGreen Peppers, 2 tbsp Tomatoes, 0.5 cup, chopped Onions, raw, 2 tbsp choppedCilantro, dried, 1 tbsp (optional)Spinach, fresh, 0.5 cup La Mexicana Tortillas Integrales, 2 tortillas Borden Mozzarella Light Singles, 1 slice
1. In a pan, add onion, cilantro, peppers and cook until softened.
2. Add mushrooms, tomatoes and spinach, cook for 3 min. Add salt. Set aside.
3. Whisk egg whites, cook for 2 minutes until scrambled, add the vegetables mix. Set aside.
4. Cook tortillas until hot.
5. Serve with egg mix on top. Add cheese and roll tortillas. ENJOY
