Ingredients
12 oz Frozen corn, spray a skillet with cooking spray and brown (taste like roasted corn)2 cans 15 oz of Black beans the lowest sodium you can find. drain and rinse.2 can 15 oz Garbanzo beans lowest sodium you can find drain and rinse.1 cup chopped green onions1 can Crushed tomatoes with green chilies1 Chopped red pepper and 1 yellow, chopped about the size of a dime. Again brown in skillet on top of stove.2 cup chopped celery 1 cup chopped cilantro1 avocado chopped (throw in the pit keeps it fresh)1/2 cup lime juice (lemon is also good)1/2 cup vinegar white or apple ciderJust combine all ingredients. It will last for about 5 days. Make 20 1/2 cup servings
