Black Beans & veggies

Ingredients
1 can black beans, drainedCelery, raw, 4 stalk, medium (7-1/2" - 8" long)Onions, raw, .66 cup, choppedGreen Peppers (bell peppers), 0.75 cup, choppedGarlic, 3 clovesOlive Oil, 1 tbspSalt, .5 tspPepper, black, .25 tsp*Cumin seed, .5 tspCinnamon, ground, .5 tspChili powder, 1 tsp
Directions
chop all veggies

heat EVOO in pan on medium-low heat. add veggies and cook about 10-15 minuntes until onion & garlic become translucent.

Add drained black beans and spices, stir to combine and heat another 5-10 minutes or until the beans are heated through.

Serve over polenta and top with LF cheese

    It was delicious. I thought it would be weird with the carrots but it was so yummy. I read the ingredients wrong so I used Italian seasonings instead, but it was great. I had fresh cilantro left over from something else so that was nice in it. - 10/27/11
