Fresh Salmon Patties

Ingredients
1 teaspoon dijon mustarda few grinds fresh black pepper1 large egg2 tablespoons chopped scallions9 ounces poached salmon12 multigrain saltines, crushed1 tablespoon olive oil, for frying
Directions
Blend the egg and seasonings with a fork. Flake in the salmon and add the saltines. Combine well and divide into 8 equal parts. Form each into a small patty. Refrigerate until ready to cook. This will help them stay together during cooking. Heat olive oil in nonstick skillet over medium heat. Pan fry patties until golden brown on both sides. One patty is one serving.
