Raw Walnut Butter

Ingredients
1 1/2 cups raw walnuts1 tsp. sea salt2 tsp. agave nectar 2 tbsp. olive oil (of course extra virgin)
Directions
Soak walnuts for 12-24 hours. This will release the enzymes. Change the water several times. Using a Vita-mix put in walnuts, sea salt, and agave nectar. Turn mixer on low with speed set to 1. Add the olive oil to get the mixture moving. Turn up the speed gradually to 10, once the mixture is moving well. Finally, put Vita-mix on high for about 30 more seconds. This whole process should take about a minute or a minute and a half.

This will produce a rich, creamy nut butter. Perfect served on apple wedges (see photo), crackers or celery sticks. Once you start making your own butters, you will not return to homogenized store brands.
