This was fantastic. I used a dribble of olive oil up front instead on non-stick spray and left off the butter at the end. I loved the sweetness of the roasted onions and carrots along with the squash. I will definitely make this again. - 9/11/10

This was sooo good! I added some canned corn, which goes really well. I loved that I could eat a lot of it without eating that many calories. I will definitely make this again soon! - 2/17/10

I also ommitted the sugar because all of these cook up sweet. So simple just to roast these together, but it was wonderful! - 1/24/10

I took my squash and sliced in crosswise into 1 inch slices. I baked it on a dish with a little olive oil at 400. About 30 min and when done, I drizzled a little honey on each slice. Very good. I will try the above another day. - 12/2/09

Really good....i used a balsamic vinaigrette in place of the sugar and butter the second time. Everyone enjoyed both ways. - 2/11/09

Outstanding! One of my goals for the fall/winter is to learn to love squash. This one did it for me. I can honestly say I LOVE butternut squash! - 10/26/08

My husband and I loved it! My 5 year old picky eater loved it too! Will make again! - 8/12/08

I used olive oil because I was too lazy to melt butter, and it still tasted fabulous. As long as I can get precut butternut squash (my cheap knives can't dent fresh, whole squash), this will be a regular on my table. - 10/29/07

After reading reviews decided to eliminate the sugar, use olive oil instead of butter and added cinnamon. It was delicious!! Will be making again. - 1/24/16

Excellent recipe just as written. I agree with other commenters that it would also be good without the sugar, making it again tonight with rutabega instead of the butternut squash! - 10/23/14

We made this last night and LOVED it! We completely forgot about adding the butter, but we found we didn't need it anyway. The flavors were perfect. This will for sure be a staple in our house. - 10/8/14

I made this last night for dinner, OHHHH EMMMMM GEEEE, they were fabulous. So full of flavor and I LOVE the blend of the flavors. For me and the Hubby it was a dish that we didn't want to stop eating. I only made half the recipe.. wishing I made the full batch! We love it; & will make it often. - 9/4/13

This is delicious! I took the left-overs and mixed them with brown rice and chicken for a delicious lunch the next day. I didn't use the butter and probably won't use the sugar next time. - 6/15/13

LOVE this. Simple, no odd ingredients. I omitted the brown sugar, used a bit less onion, and it was quite tasty with a natural sweetness. If you cut your squash into fairly small cubes, it only takes 30 minutes to bake. Yum! - 11/16/12

This was fabulous! I didn't drizzle with butter at the end because I didn't think it needed it. Even my husband like this, and he usually doesn't like butternut squash. - 10/8/12
