Japanese Rice Omelet (omurizu)

1 c. cooked Brown Rice.5c. Onions, finely chopped .5 c. Chicken Breast, finely chopped2 Eggssquiggle of Ketchup on top of finished egg
Saute onions until translucent in little oil. Add chicken until done. Add rice and toss until heated through. Add 2 tbsp of ketchup and mix well. Mound the rice on a plate. Make an omelet out of the eggs. One per person. Place on top of the rice and squiggle a little ketchup on top for garnish if desired.
