Chiles Rellenos Tolucos

4 Ancho dried Peppers (Dried Poblanos)1 can of fat free refried beans4 oz of Mozzarella cheese (part skim)4 oz of shredded mozzarella cheese (part skim)4 Tbs of light sour cream
4 servings.
Boil water in a sauce pan and add the pepper. Do not cut the pods. Simmer for 5 min or until soft.
Drain.
Cut the chiles on length-wise and remove the seeds and veins
Stuff the chiles with beans and a strip of mozzarella cheese.
Arrange the chiles in a baking dish, seam side down. Spoon 1 tbsp of cream over the top and sprinkle with shredded cheese.
Bake at 350 F for 20 min.
