Lentil Tomato Curry Stew

Ingredients
1 1/2 c dry lentils3 c water or fat-free chicken broth15 oz. can diced tomato with juice1/2 c chopped onion1 c chopped celery3 cloves garlic chopped2 tsp curry powder (or to taste)1 c Lite Coconut Milksalt & pepper to tast4 tbs sour cream
Directions
Saute onions, celery and garlic with non-stick cooking spray until tender.
Add water or broth, lentils, tomato, curry, salt and pepper bring to boil. You can add more or less curry to your taste.
Lower heat and simmer 45 min. Stir every 15 min. and add water if necessary.
Add coconut milk stir to heat through.
Top each serving with 1 tbs of sour cream.

    Wonderful -very yummy, heats up really well so I make it on Sun night & have my lunches for the week! It's so good, I've always forgotten to add the sour cream. I did cut back curry to 1 1/2 tsp. - 4/1/11
