Penne with Sun-dried Tomato Sauce

Ingredients
1 lb. Penne Pasta1 cup chopped sun-dried tomatoes1 cup firm silken tofu, drained and crumbled3 cloves garlic, chopped4 tbsp. chopped fresh basil or 1 tbsp. dried basil2 tbsp balsamic vinegar1 tsp. salt1/8 tsp pepper1 tbsp. olive oil1 small can marinated artichokes, drained and chopped2 tbsp. minced fresh parsley
Directions
1. Cook penne according to package directions. 2. While penne is cooking, combine the tomatoes, tofu, garlic, basil, vinegar, salt, pepper, and olive oil in a food processor and puree to a smooth consistency.
3. Drain the pasta and toss with the sauce and artichokes. Sprinkle with the parsley and parmesan cheese.
