Taco Bean Soup

3/4 lb. lean pork sausage1 lb. extra-lean ground beef1 envelope dry low-sodium taco seasoning4 cups water2 16-oz. cans kidney beans, rinsed and drained2 14 1/2-oz. cans low-sodium stewed tomatoes2 14 1/2-oz. cans diced Mexican tomatoes with juice16-oz. jar chunky salsa
1. Cook sausage and beef in a nonstick skillet over medium heat until no longer pink. Spoon into slow cooker.
2. Add taco seasoning and mix well.
3. Stir in water, beans, tomatoes, and salsa.
4. Cover. Cook on High 1 hour.
5. Uncover. Cook another 30 minutes. Stir occasionally. Serve.
Tip: If your diet allows, you may want to garnish individual servings with low-fat sour cream, shredded low-fat cheddar cheese, and a sprinkling of sliced ripe olives.
