Grilled Lemon Pepper Veggies

yellow squashzuchinired potatoes(red onion - optional)I can't believe it's not butterlemon pepper
Lay out a large sheet of heavy duty aluminum foil. Slice yellow squash and zuchini and place in the middle of the foil. Add sliced red potatoes and red onions if you choose to use them. Sprinkle generous amounts of lemon pepper over the top. Place pats of "butter" across the pile of veggies. Bring both ends up foil up to seal along the top and sides. Place on the hot grill about 5 minutes before placing the chicken thighs (if cooking with the Grilled Chicken Thighs). Then move to the top rack of grill to continue cooking while the you cook the thighs on the lower rack. You'll want to cook the veggies a little longer than the chicken.
