Chocolate Chip Banana Oatmeal Bran Muffins

Ingredients

1/2 cup white flour1 1/2 cup large flake oats1 cup bran1/3 cup brown sugar2 tsp baking powder1 tsp baking soda1 tsp salt1 egg1/3 cup milk1/3 cup unsweetened applesauce1 tblsp vanilla1 1/2 cups mashed bananas1 cup chocolate chips
Mix dry ingredients together. In separate bowl, mix wet ingredients. Add wet to dry. Mix until just combined, and then fold in chocolate chips.
Pour into 12 greased muffin tins. Fill right to the very top. Bake for 20-25 mins at 350. Cool and remove from pans.
They will be very very moist and almost a little sticky because there isn't much flour in them to bind them together. The flavor is amazing though!

OMG! Loved them! I made a couple of minor changes based on other comments. I replaced 1/2 c of the oatmeal with 1/2 c whole wheat flour. And, I replaced 1/2 c choc chips with 1/2 c chopped pecans. I haven't figured out how that affects the nutritional value yet but they are wonderful. - 8/5/09

The nutrition info for this is really off. It should be as follows: Calories 198.4, Fat 5.7, Cholesterol 18, Sodium 312.6, Carbs 43, Fiber 5.9, Protein 4.2. The calculated ingedients do not match the recipe ingredients. But the muffins are very tasty and a great source of fiber! - 3/14/09
