Goulash with whole wheat pasta and ground turkey

Ingredients
Directions
1 tbsp olive oil1/2 cup chopped green peppers1 small onion chopped2 cups whole wheat elbow macaroni1 pound lean ground turkey2 cups stewed tomatoes3 oz cubed reduced fat sharp cheese
1) Boil 2 cups of macaroni al dente
2) While that is cooking, Cook green pepper, onion, ground turkey in skillet in 1 tbsp olive oil. Add garlic powder to this. (Optional: add salt, pepper and other preferred seasonings to taste)
3) Drain macaroni when done and put in a casserole dish
4) Add stewed tomatoes to macaroni
5) When meat is done, drain fat off and put meat, peppers, and onions into the casserole dish
6) Toss everything together and add salt and pepper to taste
7) Add in cheese if desired
8) Bake at 400 degrees for 35 minutes or until done
Makes 6 1.5 cup servings
**Great to make this a day ahead, refrigerate overnight, and then bake!**
