Lemon Pepper Salmon with Balsamic Glaze

Ingredients
1 T olive oil4 (5-ounce) salmon filletssalt to tastelemon pepper seasoning to taste1/4c balsamic vinegar
Directions
1. Heat oil in a large skillet over medium-high heat. Season both sides of salmon with salt and lemon pepper. Add to hot skillet and cook until browned, about 2 minutes per side.

2. Add vinegar to skillet and reduce heat to a simmer. Continually spoon liquid over fish and cook until vinegar is thick and syrupy and salmon cooked through, about two more minutes for medium, longer for well done.

Serve immediately.

    This was my first SparkRecipe and it was very delicious. I am a new fan of salmon and I thought I did not like lemon pepper. My 2 kids ate half my serving, as I usually only make fish for me. I am going to buy enough to make this for the whole family this week. Thanks! - 7/20/09

    We loved this dish! However, my salmon fillets were too thick to cook completely using the method of spooning the liquid over them. Had to keep adding liquid and cook longer. The liquid I chose was orange juice and more balsamic vinegar - made a very yummy addition! - 9/26/09
