Chard and White Bean Soup

Ingredients
1 Leeks - white part only sliced thin1 C Mushrooms - stems and caps separated 3 Cloves Garlic - crushed 6 C Water (or stock) 3 C Swiss Chard - (1 bunch) leaves and stems1 C White beans 2 Veggie Italian Sausage (like Boca or Tofurkey) - Sliced 2 tsp Salt1 tsp Black PepperItalian Seasoning to Taste
Directions
1. Slice the white part of the leeks into thin slices and then in half to get half moons.
2. Remove the stems from the mushrooms and dice the stems
3. Crush the Garlic
4. Put the leeks, mushrooms and garlic in a stock pot with 1 cup of water. Bring to a boil and simmer covered for about 10 minutes or until the leeks are nice and soft, add more water if it dries out.
5. Slice the mushroom caps
6. Prepare the chard by slicing the stems into small pieces, keep them separated, then chop the leaves into bite sized pieces.
7. Add the mushroom caps and the stems to the pot along with the rest of the water, salt and pepper. Let simmer for about 10 minutes or until the mushrooms are soft.
8. Season to taste.
9. Add the chard leaves, sausage and beans simmer for 10 minutes
10. Serve with parmesan cheese if desired.
