Tortilla Soup w/out Toppings

1 rotisserie chicken, skin, bones and fat removed3-4 celery stalks, chopped3-4 medium sized carrots, chopped1 large sweet onion, chopped4-5 cloves garlic, minced1 can corn1 can black beans, rinsed1 (24oz) can tomatos, whole, cut into chunks2-4 jalapeno peppers, seeds removed, minced3-4 tbsp Better Than Buoillon, Chicken broth2 tbsp olive oil2.5 tsp ground cumin or to taste2.5 tsp ground coriander or to taste2-4tbsp cilantro10 cups waterOptional Toppings:Tortilla chipsReduced Fat Sour CreamChedder Cheese, shreddedAvacado, slicedSalsaHot SauceLime/Lemon Juice
Cook onions/carrots/celery in olive oil until they are soft and onions are see through. Add garlic, cook for 1 minute. Add broth, jalapenos, tomatoes w/ liquid, corn, black beans, cumin, coriander. While those are cooking (about 30-35 minutes) take the chicken flesh off of the rotisserie chicken. When broth is simmering add the chicken. Cook for about 15-20 minutes on medium. Season with salt and pepper. Add cilantro before serving. If you like it spicier you can add hot sauce/salsa while its cooking.
