Curried Chicken with Orzo

2 Tbsp olive oil 48 oz chicken broth1.5 lbs boneless, skinless chicken breasts4 teaspoons thai curry paste1lb broccoli stir fry mix, frozen2 teaspoons curry powder2 cups uncooked orzo pasta1 can (14 oz) lite coconut milk1/2 cup cilantro leaves, chopped
Cut chicken into bite sized pieces, brown in olive oil.
Add broth, curry powder, and curry paste. Bring to boil.
Add orzo and frozen vegetables, slowly. Return to a boil.
Boil for 9 minutes or until orzo is al dente.
Remove from heat, stir in coconut milk.
Garnish with cilantro.
