1.5 cup AP flour.5 cup wheat germ.5 cup sugar1 tbsp baking powder.5 tsp salt optional1 cup skim milk.5 cup unsweetened appleasauce1 large egg2 tbsp wheat germ
Makes 12 muffins
Heat oven to 400 degrees. Line 12 muffin cups with papers or spray the pan. Combine flour, .5 cup wheat germ, sugar, baking powder, and salt in one bowl. Combine milk, applesauce, and egg in another bowl. Pour wet ingredients into dry, mix until just combined. Fold in cranberries. Fill muffin cups 2/3 full, sprinkle tops with remaining wheat germ. Bake for 20-22 minutes, until a toothpick comes out clean.
