Chicken & Veggies in Rich Broth

Ingredients
1 qt. free range chicken broth1 can coconut milk2 T shredded ginger root3 T dried basilZest & juice of 1 lime3 chicken breasts, chopped into bite-size pieces4 carrots, sliced1 red bell pepper, chopped1 c sliced mushrooms2 stalks celery, sliced2 small zucchini, chopped2 c frozen cornSalt to taste
Directions
Combine coconut milk, broth, ginger, lime zest & juice, & basil. Bring to boil & reduce heat to medium-low. Simmer while you chop the veggies & chicken. Add meat & veggies to broth & simmer about 10-15 minutes until chicken is cooked through & veggies are tender.
Makes about 8 1 1/2-cup servings
