Tortilla "Cigars"

Ingredients
1 cup chicken breast sauteed or roasted1/2 cut shredded reduced fat cheddar cheese1/2 cup yellow squash puree1/2 cup carrot puree4 tbsp reduced fat cream cheese10 small whole wheat tortillas1/4 tsp garlic powder1/4 tsp salt
Directions
1. preheat the oven to 350 degrees. Line baking sheets with aluminum foil.

2. In a large bowl, stir together the chicken, cheese, squash and carrot purees, cream cheese, garlic powder and salt.

3. Place a tortilla on the work surface, spread about 2 tablespoons of the filling along one side. Starting at the edge, roll the tortilla into a cigar shape. Place seam side down on the baking sheet. Stuff the rest the same way

4. Bake until the tortillas begin to brown, 4-5 minutes.

    I have this cookbook and have made this recipe many times. I puree the chicken to make it easy to roll in the tortillas. They are also good cold, my husband takes the leftovers to work the next day. - 9/22/09
