Spicy Rubbed Halibut

Ingredients

1 lb fresh halibut2 T minced garlic1/2 t cumin1 t chili powder1 T unsalted butter1/2 c buttermilk2 t lemon juice
mix the garlic, cumin, chili powder and ten grinds of black pepper into a paste
cut the fish into 4 pieces
rub the paste into the top and bottom of the halibut pieces
melt butter on medium high heat
quickly sear both sides of the fish
turn heat down to medium low, pour in the lemon juice and buttermilk, cover and simmer for 15 to 20 minutes or until the fish flakes with a fork (cooking time will depend on the thickness of the fish)
let sit for 5 minutes and serve
