10 egg whites2 cups oatmeal2 apples, finely chopped or applesauce1 tsp. cinnamon3 tbsp. honey1 tsp. vanilla extract1/2 c. raisins
Whip the egg whites in a medium sized bowl. Add the rest of the ingredients and mix well. Pour into muffin pan lined with muffin liners or sprayed with nonstick cooking spray. Bake at 375 degrees for 20 minutes.
Yields 12 muffins.
