Chicken Cacciatore

6 chicken breasts, boneless, skinless1/4 cup canola oil1/2 cup flour2 cups thinly sliced onion rings1/2 cup chopped green peppers2 cloves garlic, crushed16 oz. canned crushed tomatoes8 oz. tomato sauce3 oz or more canned sliced drained mushrooms1/2 tsp. salt1/4 tsp. oregano
Wash chicken and pat dry. In large skillet add canola oil. Coat chicken with flour. Cook chicken in hot oil over medium heat for 15 to 20 minutes or until brown. Remove chicken and set aside.
Add onion rings, green pepper and garlic to skillet; cook until tender.
Stir in remaining ingredients. Add chicken; cover and simmer 30 to 40 minutes or until thickest pieces are tender. Serve over thin spaghetti or linguinni. Makes 6 servings.
