Potatoes O'brien

Ingredients
5 Yukon Gold Potatoes1 green bell pepper1 red bell pepper (or yellow I guess)1/2 large sweet onionOlive oil for cookingsalt and pepper to taste
Directions
Chop peppers and onions to size you prefer.

Cut potatoes to size you prefer.

Rinse potatoes then boil for a short time (about 5-10 minutes). Rinse potatoes again and pan fry in oil for about 15-20 minutes stirring every 5 minutes until deep brown.

While potatoes are boiling, fry onions and pepper in oil for about 5-8 minutes stirring frequently. Set aside and add to potatoes in last five minutes of cooking.... Ta da!
