twice baked potatoes (richard simmons)

Ingredients
Broccoli, frozen, 32 oz*Baked Potato, with skin, 6 large (3" to 4-1/4" dia.Sour Cream, reduced fat, 1 cup Shallots, 1/2 cup chopped *Soy Sauce, 2 tbsp Pepper, black, 2 tsp kraft 2% mexican cheese, .75 cup Bacon, 2 medium slices, crumbled
Directions
cook potatoes for 1 hr at 400 degrees

scoop out insides --leave 1/4 inch in skin

mash potatoes in bowl w/ sour cream, onion, soy sauce, and pepper

thaw broccoli and squeeze out moisture

stir in broccoli

put mixture in skins--top w/ cheese and bacon

bake 10 min at 400 degrees

1 serving equals 2 halves! or 1 half potato if a side dish
