Dhaal (Indian Lentil Soup)

Ingredients
2 cups brown lentils1 cup black lentils1 cup red lentils1 stick butter, unsalted1 head garlic ground and an equal amount of ginger3-5 Tbsp Garam masala (an Indian spice)1 cup whole milk
Directions
Soak brown and black lentils overnight.
Rinse lentils and put in a large sauce pot. Add red lentils, cover with water, bring to a boil, then simmer.
Finely chop or grind a head of garlic and an equal amount of ginger. Mix with Garam Masala.
In a saute pan, melt butter, add spice mixture, and cook over medium flame, stirring constantly, until it browns.
Mix browned spice mixture into lentils and continue to simmer 30-40 minutes. Add Milk.
Continue to simmer another 20 minutes or until lentils reach the desired firmness. Some should be falling appart while others should still be slightly crunchy.
Serve with rice or naan or pita.

    I was so disappointed. I expected a rich, deeply satisfying soup, but this was not it. I added some salt to my dish, and it helped a bit. I made it exactly according to the recipe. Maybe I didn't saute the seasonings long enough? - 7/7/09
