Poached Apple with a Vanilla Sabayon Sauce

1 large Granny SmithLemon juice from 1 wedge15 g raisins1 Tbsp raspberry jam40 ml Orange JuiceSabayon:20 ml Skim Milk25 ml Cream1 tsp Vanilla Extract1 Egg yolk15 g Sugar
1. Peal and core an apple. Sprinkle lemon juice on it to stop browning. Fill it with the raisins and the marmalade.
2. Place the apple in a casserole dish, pour in the orange juice and cover it. Place in 350*F preheated oven for 30-35 minutes, until cooked soft.
3. Combine the milk and cream in a pot, adding the vanilla extract to it. Simmer, but don't let boil.
4. Take the liquid from the stove, and add the egg yolk, sugar. Whisk the liquid over gentle heat into a foam.
5. Place the apple on a plate. Pour the sabayon evenly around the plate. Eat immediately.
