Spinach Bacon Chicken Roulades

Ingredients
2 chicken breasts, halved to make 4 thin pieces, pounded flat2 slices bacon, cooked until crisp1 Tbsp salted butter1/4 C chopped onion4 cloves garlic, pressed or chopped1 cup frozen chopped spinach1/4 C Italian bread crumbs2 tsp grated parmesan cheesefresh ground black pepper
Directions
Preheat oven to 425 degrees. Lightly coat a casserole dish with a small amount of oil or cooking spray.

Melt butter in a small saucepan. Add onion. Saute briefly until onion begins to soften. Season with black pepper. Add spinach and garlic. Cook over medium heat until garlic softens. Be careful not to burn the garlic! Remove mixture from heat.

In a separate bowl, combine bread crumbs and parmesan cheese.

Season pounded chicken breast halves with pepper. Divide bacon strips in half. Place one half bacon strip on end of chicken. Spoon on 1/4 of the spinach mixture. Roll up. Secure with toothpick if necessary. Roll in bread crumb mixture.

Place chicken roulades in baking dish. Bake for approximately 30 minutes, or until juices from chicken run clear.

Slice in half diagonally and serve.
