Gungho's Citrus Ginger Tilapia

Tilapia filets, 12 oz (about two filets)1 tbsp ground ginger1 pat salted butter1 tsp olive oil
In a nonstick skillet, add olive oil and butter on medium heat.
While butter is melting, rub ginger on both sides of each tilapia filet.
Once butter has melted, add tilapia to pan, just searing ginger on both sides of each filet.
After searing filets, pour grapefruit juice overtop filets, adding just enough to cover bottom of pan.
Cover pan and simmer till fish is cooked through, 5-8 minutes depending on thickness of filets.
Makes 3 4-oz servings.
