Papaya, pineapple muffins

Ingredients
1 1/2 c whole-wheat flour1 1/2 tsp baking powder1/2 tsp baking soda2 tsp cinnamon1/2 c canned crushed pineapple, drained1 c cubed papaya1/3 c yogurt1/4 cup of egg beaters, or egg whites2 Tbsp unsweetened applesauce1/4 c splenda1/4 c honey1/4 c walnuts1/4 c raisins, chopped
Directions
1. Preheat oven to 375°F.

2. In a large bowl, whisk together flour, baking powder, baking soda, and cinnamon.

3. In a food processor or blender, purée pineapple, papaya, and yogurt. Mix in egg beaters, applesauce, splenda, and honey.

4. Combine pineapple and flour mixtures; fold in walnuts and raisins.

5. Lightly spray 12 paper-lined muffin tin wkth fat free cooking spray. Spoon in batter. Bake for 20 to 22 minutes or until tops spring back when lightly touched. Cool on a wire rack. Note: the muffins tend to stick to the sides of the paper until they are completely cooled.

Makes 12 muffins.
