1 cup water3 tblsp butter, unsalted1 cup flour3/4 tsp. salt4 cold eggs, large4 oz. Gruyere cheese, grated1/4 tsp black pepper
Preheat oven to 400 degrees. Line 2 rimmer baking sheets with parchment paper.
Bring water, butter and salt to a simmer in heavy saucepan. Whisk until butter melts. Add flour, stirring quickly with a wooden spoon until flour absorbs all the liquid and forms a ball. Stir vigorously for 1 - 2 minutes. Using an electric mixer, beat eggs into dough - one at a time (incorporate egg fully before adding another egg). Stir in grated cheese and pepper. Drop dough by the tablespoonful onto prepared baking sheets.
Bake at 400 for 15 minutes, switch pan positions in the oven and bake an additional 15 minutes. Serve hot or warm. Can be made up to 3 hours ahead. Rewarm in 350 degree over for 5-10 minutes.
Makes 18 - 24 rolls.
