15-Minute Chili

Ingredients
1 pound ground turkey 1/2 cup chopped onion 1 16 oz. can pinto beans, drained and rinsed 1 16 oz. can kidney beans, drained and rinsed 1 28 oz. can chopped stewed tomatoes 1 tablespoon chili powder 1 tablespoon cumin powder 1/2 cup salsa
Directions
1. In a large pot, brown turkey with chopped onion.
2. Add beans, tomatoes, garlic, chili powder, cumin, and salsa to turkey mixture. Cook until hot.
3. Serve with cornbread, cooked pasta, cooked rice, or on top of a baked potato. Sprinkle with cheese if desired.
Makes 4 servings.

When I 1st made this, I thought- this tastes like diet food. Not rich, not satisfying, something was missing. Then I let it sit on my stove covered for two hours until I put it away. I took a taste and the difference was amazing. Now it was good. Make it early and let the flavors blend. - 2/1/09

I simmered mine a bit longer than the 15 minutes b/c the beans weren't soft enough yet to my liking. The reason the calorie count is so high on this is b/c it's based on 4 servings when it produces 8 one-cup servings, so you can count down the calories just by watching your portion size. As others have said, I found this chili not terribly good after only 15 minutes of cooking. So I let it simmer for a couple of hours, too, and it's delicious. Means I can't make it after a long day at the office, but I can make it on the weekend and put it in the fridge for the week. Heat in micro. - 3/13/09

I am not sure why you got such a high calorie count on the recipe. When I added mine up I got far less. I used 93% Gr. Turkey. This was a hit with my family as well. Made a few adjustments to my families liking. No Pinto beans and added a can of Diced Tomatoes to make it go further. - 11/3/08

A lot of people commented about the need for the chili to simmer longer. Ever thought of doing this in the crockpot? Brown the turkey and onions on the stove first, then put everything else in the crockpot and let it simmer all day. Come home to a ready-to-eat, healthy, comforting, and warm meal. - 10/24/09

This was great!!! I took the poster's suggestion and ladled some over a big bowl of salad. Soooo good! I used Yves ground round instead of real meat, also used black eyed peas instead of black beans since that's what I had. I also added chopped green pepper. Yum, yum! Thanks for the recipe. - 12/5/08

I made this with 2 cans of petite diced tomatoes with green chiles, added 2 more tbsp of chili powder and a whole can of nsa tomato paste. It was great that way. I don't think it would have passed my husband's taste test the way it was written in the recipe but it is simple and I'd make it again. - 1/29/08

Delicious recipe - I made mine a little more gourmet by adding some half cooked chopped baby bellas a few minutes before I turned the stove off. I let the pot sit for about 15 minutes and voila - we were chowing down! Wonderful on a bed of greens. My husband and kids had theirs over rice. - 2/18/09
