Chicken Breast, no skin, 2 unit (yield from 1 lb ready-to-cookOnions, raw, 2 large Hot Sauce, Frank's Red Hot, 24 tsp (1/2 cup)
Dice chicken and saute in olive oil. Remove chicken from heat and saute 2 sliced onions until lightly browned. Add the chicken back into the pan and add the hot sauce. Simmer on low for 3-5 minutes for flavors to meld. Serve on toasted whole wheat hoagie roll with melted provolone or mozzarella cheese if desired. For a lower fat alternative, mix 1 tablespoon of blue cheese with 1/2 cup of lowfat cottage cheese and spread onto both insides of sub roll. Yum!
