Chicken Scampi

Ingredients
1.5 pounds boneless skinless chicken breasts, cut into 1/2" pieces1 medium onion, chopped4 cloves garlic, minced1/3 cup butterSplash White WineJuice of 1 lemon, plus a little zest2 Tbsp. Chopped Italian ParsleySalt and Pepper to Taste
Directions
Saute the onions and garlic in butter over medium-high heat until onions are soft.
Add chicken to pan and stir until cooked through (about 10 minutes).
Splash in a little white wine, then squeeze in the lemon juice and add the lemon zest and parsley.
Let simmer about 10 minutes and serve alone or over pasta or rice.
