Ingredients
Directions
1 potato1 carrot1 cup lentils3 tbsp ketchup1 can baked beans (I use the kind that comes in tomato sauce)4 cups water
1. Put about 4 cups of water on to the boil. While you are waiting, dice the potato and carrot (peel the carrot). I cut mine quite small so it cooks fast and is easier to eat.
2. When boiling, put veges in. Also add the lentils, as these don't take very long to cook (I use orange lentils).
3. When the veges are about half cooked (not tender yet) add the baked beans and ketchup. The lentils should be done or almost done at this point.
4. When the veges are tender, (BUT NOT OVERCOOKED!) it's ready. If it's only me eating it, I add a little cayenne pepper, but don't do this if kids are eating it.
Serves about 5 bowl-fulls (maybe 1 1/2 cup serving)
