Low Fat Gingerbread Cake

1 1/4 cup all purpose flour1 tsp ground ginger0 tsp cinnamon1/2 tsp baking soda1/2 cup sugar1/2 cup plain fat free yogurt or buttermilk1/4 cup canola or vegetable oil1/2 cup molasses1 egg, lightly beaten
Preheat oven to 350. Coat an 8-inch square baking pan with nonstick cooking spray.
Combine flour, ginger, cinnamon and baking soda in a small bowl. In a large bowl, stir together sugar, buttermilk or yogurt, oil, molasses and egg. Add flour mixture to wet ingredients and stir well.
Pour into baking pan and bake for 25 minutes.
Cut into 16 squares.

WOW! Moist and delicious treat for only about 130 calories/serving! I made it with no cinnamon & used powdered buttermilk per can instructions-it was perfect.The only change I made was to substitute 1/2 cp of the white flour with 1/4 cp + 2Tbsp white whole wheat flour.I am book marking this recipe! - 12/29/13
