Chicken Fried Rice

Ingredients
Directions
1 cup uncooked brown rice 2 cups water (for rice)1 tablespoon olive oil6 cups frozen vegtables1 pound uncooked chicken breast cut into bite sized pieces.2 whole eggs2 egg whites4 tablespoons low sodium soy sauce3 tablespoons peanut sauce
You will need a big stir fry pan for this!
Cook rice according to package directions
Coat pan with a tablespoon of olive oil
Stir fry your vegetables until they are crisp tender and then transfer them to a bowl or plate until later.
Cook chicken and push it aside
Beat eggs and egg whites together and then scramble them in the pan.
Once eggs are cooked add the vegetables, rice, and sauce to the pan and mix everything together.
Note on sauce: The peanut sauce adds a bit of a spicy kick but isn't needed. Basic stir fry sauce in place of soy sauce also makes yummy fried rice.
