2 skinless boneless chicken breasts2 skinless chicken thighs 2 skinless chicken legs2 15 ounce cans diced tomatoes1 6 ounce can tomato paste3 4 ounce cans mushrooms, pieces and stems1 large can jumbo ripe olives, each quartered1 diced onion1 diced red bell pepper7 cloves garlic, roughly chopped1 15 ounce can artichoke hearts, quartered1 cup white wine1 T. Italian herbssalt and pepper to taste
Cut the breasts in half and place into a large dutch oven with the legs and thighs. Add all other ingredients and mix well. Cover and bake in a 350 degree oven. When finished remove leg and thigh bones. Serve over brown rice or pasta.
