Ingredients
Directions
3 6 ounce cans of tuna6 Tablespoons of light mayo3/4 cup celery1/2 cup onion1 cup sweet peas juice of 1 lemon16 oz bag of dried whole wheat elbows or spirals
Cook pasta in salted boiled water, but elimate fat. During the last 3 minutes of pasta boiling add the peas, if using frozen.
While the pasta cooks, dice celery and onion. Mix onion, celery, light mayo, and lemon juice in a very large bowl.
When the pasta is al dente, drain and rinse in cold water. To retain more of the nutrients in the pasta drain the pasta and then place in the freezer for 10-15 minutes to cool instead of rinsing.
Mix noodles with the mayo mixture. Chill and enjoy!
