Spelt Waffles

1 Cup Plain Yogurt3/4 Cup Soymilk or Regular2 large Eggs, at room temperature2 Cups Spelt Flour (or whole wheat)1/4 Sugar1 1/2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt
Preheat Waffle Iron. In a small bowl, whisk together the yogurt, milk, eggs. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Add the milk misture and whisk until combined.
Lightly grease the Waffle Iron. Follow the waffel manufacturer's instructions, or spoon about 1/3 cup of the batter onto the hot iron. Close the lid, cook until waffles are golden brown. repeat until batter is used up.
Serve with fruit salad and a bit of maple syrup.
