--1 box couscous--1 chopped pepper--Any kind of pepper you like (I used a combination)--1 chopped tomato--1/2 cucumber--1/2 onion--1/2 cup feta cheese crumbles--1/4 cup extra virgin olive oil--juice from 2-3 limes (or 2-3 TBSP lime juice)--1/4 cup chopped cilantro (or parsley if you prefer)**You could use other vegetables as well or instead**

1. Cook the couscous according to the directions on the box.
2. While it's cooking, chop vegetables into bite-sized pieces.
3. Chill the couscous for 15 minutes before adding remaining ingredients.
4. Add remaining ingredients and chill for 30 minutes. (You can skip this if short on time...the salad is still good!)
